What NVR model you have?
Typically, the number of ports that you have on the back of a PoE NVR is the same as the number of channels it can support. So if you have a 16-channel NVR, it would have 16 individual PoE ports to connect you cameras + another LAN port to connect your router. Check, for example, this one – DS-7616NI-K2/16P.
However, if you have a DS-7616NI-K2 model, then there is just one LAN interface on the back of the recorder but it can support up to 16 channels. NB! This model does not support PoE. So if you have PoE cameras you may need to get a PoE switch.

I have DS-7616NI-K2, I was under impression that this was a PoE model, but having just checked the specifications, it looks that it is not???
Is there any way I could 'upgrade' into PoE?
If not, do I just get a PoE switch and get it connected to a router?

No, this is not a PoE nvr and there is no way to upgrade it to one. That said, you can use use a poe switch for power supply to your cameras.
